Easy Spaghetti Carbonara Recipe

This recipe was given to me last week by my friend Kerri’s lovely mum Linda who looked after me when I was over in Portugal sans Jamie.

It’s delicious and easy peasey to make. I thoroughly recommend it.

Serves 4

Ingredients:

  • Diced onion
  • 3/4 cloves garlic, crushed or finely grated
  • 8 slices bacon, chopped thinly
  • 1 chicken breast thinly sliced
  • large knob of butter
  • Good glug of olive oil
  • 1 tub mascarpone cheese
  • 150ml pouring cream
  • good handful of parmesan cheese
  • spaghetti (cooked)

Method:

  1. Put the knob of butter and the olive oil in a large pan and melt the butter
  2. Add the diced onion and grated or crushed garlic. Cook for 5 mins, stirring frequently
  3. Add the chicken and bacon and cook for a further 10 minutes, again stirring frequently
  4. In a small bowl, mix the cream and mascarpone and parmesan cheese together before adding this to the bacon & chicken in the pan
  5. Let this simmer on a med/low heat for 5 minutes stirring as you go
  6. Once the spaghetti has cooked, add this to the sauce and combine
  7. Serve with parmesan sprinkled on the top and some garlic bread.
