Hotchpotch Hotpot

I’ve called this Hotchpotch Hotpot as I really do think that it could be made with quite a few bits and pieces and it would be equally as tasty. I cooked mine in the slow cooker that had been stuck in the cupboard for a while. I had forgotten how much I LOVE that piece of equipment, so, so easy to use and as Sam slept for nearly 4 hours meant that I could stick everything in it and get on with bits and bobs in the house. I’m sure that the whole thing will work if cooked like a casserole too

Ingredients: (Serves 4)

  • Sausages chopped into 3 pieces each (choose how many you want per person) you could also use chicken or beef pieces
  • 1 x 400g tin baked beans in tomato sauce
  • 1 x 400g tin kidney or butter beans
  • 150ml chicken stock
  • potatoes washed but not peeled and cut into quarters (or slightly smaller if large potatoes) you can judge how many are appropriate. I used 3 medium potatoes

Method (if using slow cooker)

  1. Put everything in the slow cooker, stir to mix together and cook on a low heat for 8-9 hours or a high heat for 6-7hours
  2. Serve with vegetables of your choice

Method (if using casserole pot)

  1. Brown the meat in a frying pan, put in the casserole pot
  2. Add all the beans, stock and the potato chunks, mix together to ensure everything coated in the juice and stock
  3. Cook for an hour at 200c (180c for fan ovens) until the potatoes are soft
  4. Serve with vegetables of your choice
