Shepherd’s Pie DeliciousNess stylee
« Recipes | Posted on 09/10/2010 06:54 pm by NessMy shepherd’s pie recipe is a bit of a mix of recipes and this is the end result. So far (apart from my mother) it has been a resounding success with people. I must credit my friend Jo Heaney for the addition of ketchup & baked beans, trust me, it works.
Ingredients
- olive oil
- 1 onion diced
- 2-3 carrots, grated
- frozen peas and/or sweetcorn (optional)
- 750g minced lamb (use minced beef if you want to make cottage pie)
- 1-2 tablespoons plain flour (to mix with the cooked mince to soak any fat up)
- 2 400g cans baked beans in tomato sauce
- a good few squeezes of tomato ketchup
- enough mashed potato to top the mince mixture in the baking dish
- grated cheddar cheese
Method
- Fry the diced onions in a good splash of olive oil for 5 minutes
- Add the minced lamb and brown
- Add 1-2 tablespoons of flour and mix well
- Add the grated carrot, 2 tins of beans, peas & sweetcorn (if using), ketchup and salt & pepper seasoning to the mince and mix well
- Leave to simmer for 20 minutes
- Whilst this is cooking, make your mashed potato and grate as much cheese as you like for the topping
- Take the mince mix off the heat and pour into a large baking dish or 2 smaller dishes
- Top with mashed potato and the grated cheese
- Place under a hot grill until the cheese is bubbling & melted
- Serve with garlic bread & veg of your choice. Enjoy!
This dish freezes brilliantly and is another winner for food stockpiling!
