The Perfect Spag Bol from DeliciousNess

I’ve finally done it. After years of different recipes and tweaking and changing and adding and taking away I, this very evening, made the perfect spaghetti bolognese and I am sharing my findings with you and hope that you also think it is pretty perfect.

Ingredients: (serves 4 adults)

  • 1 red onion, finely chopped
  • 4 cloves garlic, finely grated or crushed
  • 1 large carrot, finely grated
  • 1 large courgette, finely grated
  • 450/50og lean mined beef
  • 500ml passata
  • 2 heaped tablespoons of oregano
  • dash of Worcestershire sauce
  • Salt (pref sea salt) and pepper

Method:

  1. Pour a good glug of olive oil into a large pan over a medium heat
  2. Add the onion, carrot, courgette & garlic
  3. Soften for 5 mins, stirring frequently
  4. Add the mince and brown, stirring frequently for 5-10 mins
  5. Once browned, add the passata, Worcestershire sauce and oregano (if you prefer a more liquid sauce then use more passata) add salt and pepper as you see fit. I used a pinch of Maldon salt and a good helping of pepper.
  6. Stir all the ingredients together well and simmer for 30 mins, checking and stirring when necessary.
  7. During the last 10 mins of cooking cook spaghetti as you would normally
  8. Take the cooked spaghetti and add to the sauce mixing well
  9. Serve with grated cheese and garlic bread.

I’d love to know your thoughts on this recipe if you make it. It’s a winner for kids and there are no lumpy veggies. My 1 year old scoffed a huge bowlful this evening!
