Victoria Sponge. Homemade. Filled with mascarpone icing and homemade raspberry jam and topped with more mascarpone icing.

I made this last September for Jamie’s birthday. It was a week before Sam arrived. It was the last time I baked.

Baking is my simple pleasure, I adore baking. I feel sad that it’s actually been almost six months since I made something that fabulous. I don’t seem to find the time to do anything for me. How do others manage? Is it something that comes with practice?

I am going to remedy this lack of “me time” soon. My magimix will come out of hibernation and will fulfil it’s purpose. I promise to share the results.
